Hello everyone, good morning to you all. Welcome back to my blog. I hope you all had a wonderful night rest? Today I will be sharing my food diary with you guys.

Breakfast

I had moi- moi for breakfast. I bought this Moi-moi from the market and it costs #200 about 2steem. Moi-moi is beans budding, It is cooked with grinded beans, fresh pepper, onions, crayfish, salt, groundnut oil and seasoning cubes.

Preparation

First the beans is soaked overnight, and the back is removed afterwards. The beans is grounded with fresh pepper, red bell pepper, onions and crayfish. After grinding, it is mixed with water and groundnut oil and put in a small tin container used for making Moi-moi and steamed on heat for about 1hour.

Health benefits

It contains high protein content.

Helps in blood circulation.

It helps in regulating blood sugar.

It contains vitamin B.

Lunch

I had beans and yam Porridge for lunch.
This meal is prepared with beans, yam, onions, fresh pepper, salt crayfish, red oil and seasoning cubes.

Preparation

The beans is first picked to remove the bad ones and parboiled. The beans is cooked until its tender and then, yam, red oil and other ingredients is added. Water is also added and the food is allowed to cook for some time. The heat is turned off when the food is done.

Health benefits of beans and yam Porridge

Beans is a high source of protein.

Yam contains carbohydrate.

Beans is an antioxidant.

Dinner

I had Yam and vegetable for dinner. It is prepared with yam, vegetables, onions, fresh pepper, salt, seasoning cubes and crayfish.

Preparation

The yam is peeled and cut into small pieces afterwards it is boiled. The vegetable is washed and sliced. When the yam is done, the water is removed after which the vegetable is cooked for about 5minutes. After cooking the vegetable, add yam, red oil and other ingredients to the pot and stir with a wooden spoon.

Health benefits of yam and vegetable

Vegetable is a high source of vitamin.

It boosts the immune system.

It is good for the eyes.
