Preparation Method
I began by washing the meats and fish, then placing them in a pot. I added a blend of seasonings, including salt and other spices. Next, I added little water to help cook the meats, and then brought the mixture to a boil.

Next, I heated some red oil in a separate pot over the cooker. Once the oil was hot, I added the chopped onions and fried them until they were a little brown.
Then, I added the ground egusi and stirred frequently to prevent burning. I continued frying the egusi until it became fragrant and started to clump together.

Once the melon was well-fried, I carefully poured it into the pot of simmering meat, then covered the pot and allowed the mixture to cook for about 5 minutes.
After 5 minutes, I added the washed periwinkle, stirring well to combine, then I also added other ingredients, I then allowed the mixture to boil for an additional 2-3 minutes.
Curry leaves was the last item that I put in the pot, after putting the leaves I stir it well and covered the pot and allowed it to simmer for just 2minutes before I turn off the cooker.

Melon soup is one of my favorite dishes, and what I love most about it is its versatility. You can prepare it with a variety of leaves, such as bitter leaves, uziza leaves, curry leaves, vegetable leaves (like pumpkin), water leaves, and many more.
