How to Cook Bitter Leaf Soup Using Cocoyam Powder
Bitter leaf soup is one of the best soups known to the Igbo people in the Eastern part of Nigeria. Some people don't like bitter leaf soup simply because of the bitter taste of the leaf, which is also known as Ofe Onugbu.
While growing up, I was part of those that hated the taste of bitter leaf, but today I am a lover of bitter leaf soup, and I am going to be showing you how to prepare a jealous bitter leaf soup using Cocoyam powder and other ingredients. First, in order to make your bitter leaf soup taste sweet, you must ensure that the leaves are washed thoroughly to get rid of the bitterness.

- Cocoyam Powdered
- Assorted meats (goat meat, Beef,ponmo (cowskin), shaki, and stockfish are ideal for the soup)
- Crayfish
- Fresh fish
- Ogiri Okpei
- Fresh pepper
- Onions
- Cup bitter leaf (thoroughly washed)
- Bouillon Cubes
- Salt to taste
- Palm oil

Instruction1:
Start by washing your bitter leaf thoroughly to remove the bitter taste and keeping it aside. In my case, I bought already-washed bitter leaf in the market.
Instruction2:
Begin by seasoning your protein (boiling your meat, goat meat, cowskin, etc.). When you have cooked your meat, add stockfish or fresh fish and allow it to cook till soft.
Instruction3:
While your meats are on fire and boiling, add ingredients such as pepper, crayfish, salt, etc. and allow them to cook.
Instruction4:
Add the palm oil, stir, and leave the soup to be thoroughly mixed for about 3 minutes.
Instruction5:
At this point, turn the heat down and add your Cocoyam powder. First, put it on a small plate and stir it before adding it. The cocoyam will dissolve and make the soup thicker.
Instruction6:
Add your ogiri and stir very well. At this point, you can taste the soup to know if you need to add salt or Maggi again.
Instruction7:
Add your bitter leaf and allow the soup to boil for at least 5 minutes.
Instruction8:
Put off your gas, serve with your preferred swallow of your choice, and enjoy yourself, just as I have.
