Food challenge contest week #45 || How To Prepare Afang (Okazi) Soup
Afang, whose botanical and English name is Gnetum Africanum and wild spinach respectively is a green plant cultivated especially in the western part of Africa like Cameroon, Nigeria, Togo etc. It is known as Okazi in Igbo and Afang in Ibibio. Well in the course of this post, I will be using afang which is the Ibibio name. Afang soup is not only delicious but also nutritious for the body. This post will show steps to prepare this delicious soup effortlessly.

To prepare Afang soup, you need a lot of things to spice up the soup. These ingredients are:
- Afang leaf
- Water leaf
- Stock fish, fish, crayfish,
- Meat (Cow meat is mostly used)
- Palm oil
- Pepper, seasoning cubes, salt
- Periwinkle (optional)

To get the ingredients needed for the preparation of afang soup, I went to the market to source for them. I got all the ingredients I needed to prepare my afang soup, not forgetting afang leaf and either garri, fufu or semo (your choice). The afang leaf was sliced in the market and grounded also.
- On reaching the house, I washed my hands and also the utensils to be used in cooking. I also washed the water leaf and cut it too.

- I washed my smoked fish, stockfish and meat and put it in my pot. After which I put the pot on fire. The meat and fish were seasoned using seasoning cube, small amount of salt, onions, pepper and small amount of water. I Made sure the content in the pot was cooked properly for about 10 minutes.
- I added a little amount of water again, before putting my water leaf. I made sure the water I put in the soup isn't much, this is done to avoid an overflow of water. I added salt, seasoning cubes and pepper for it to taste. I allowed the content to steam for 7 minutes before adding palm oil.
I stirred the content to mix well. Before adding my grounded crayfish. My food is almost done. We are left with just one more thing which is .... Our grounded afang leaf.
I poured in the afang leaf and stirred the content, allowing it to steam for another 2 minutes before bringing down my wonderful pot of afang soup
Well I prefer using fufu to eat my afang soup.

I used a can of malt to enjoy this delicious soup.
It took me 30 minutes to prepare this afang soup to taste.
