In this week food challenge, I will be preparing a simple ripe plantain and beans porridge.
Plantain is good to be taken as fruit when it ripe. But most times, people enjoy cooking, boiling or frying. It also depends on individual choice. People tend to eat it the were they desire because of the nutritional benefits they will get.
Without much time wasting, let's begin!
Ingredients needed
Ripe plantain
Fish
Beans
Crayfish
Onions
Scent leaf
Seasoning cubes, Pepper and Salt
Preparation
- You first select the beans and remove the foreign object, wash it very well, put the beans in the pot and boil until it becomes very soft.
As the beans is on fire, wash the plantain, peal out the fruit, wash it again and slice it to your desire shapes and keep aside.
Check the beans if it is soft enough, remove it from the fire and drain it.
Put it back in the pot add small quantity of water, add some slice onions and put it back on fire.
- 10minute time, open the pot. Add the plantain, fish, remaining onions, crayfish, pepper, salt and seasoning cubes. Mix every thing together and have a taste. Then allow it for 30minute.
Note: Since the plantain is ripe, you will not cook it for a longer time.
- After 30minute, wash the scent leaves, slice and add on it. Add red oil too and stir it very well. Leave it for 2minute. After the minutes stir and off the light.
Your ripe plantain plus beans porridge food is ready
Beans also plays a role in the body. Both of them are a source of fiber which is good for health. They improve good digestion and make you fill full.
