How to prepare Afang soup.

Hello lovely kids and parents much regards to everyone and I believe you all are doing great and thank God it's Friday (TGIS) happy Sunday to all the to everyone in this noble community.

Today I'm so happy to show you guys how to prepare Afang soup.

To prepare Afang soup, you'll need the following ingredients and follow these basic steps:

Ingredients:

  1. 200g of fresh Afang leaves (substitute with spinach if unavailable)

  2. 200g of waterleaf (substitute with lambs lettuce or another green if needed)

  1. 400g of assorted meat (beef, goat meat, tripe, etc.)

  2. 200g of smoked fish or stockfish

  3. 2 tablespoons of ground crayfish

  4. 2 tablespoons of palm oil

  5. 2-3 scotch bonnet peppers (adjust to your spice preference)

  6. 1 medium-sized onion

  7. Seasoning cubes or powder (Maggi, Knorr, etc.)

  8. Salt to taste

###Instructions:

  1. Wash and prepare your assorted meat by cutting it into bite-sized pieces. Place it in a pot, add water, sliced onions, seasoning cubes, and salt. Cook until the meat is tender and the stock is concentrated. Keep the stock for later.

  2. In a separate pot, cook the smoked fish or stockfish until they are soft and debone if necessary. Set aside.

  3. Wash the Afang leaves thoroughly and slice them into tiny pieces. If you're using frozen Afang leaves, ensure they are thawed before use.

  4. Wash the waterleaf or substitute greens and finely chop them.

  5. Heat palm oil in a separate pot until it becomes clear (without smoking). Be careful not to overheat it.

  6. Add chopped onions and scotch bonnet peppers to the palm oil and sauté for a few minutes.

  1. Add the ground crayfish and stir well.

  2. Pour in the meat stock from step 1 and let it simmer for a few minutes.

  3. Add the cooked assorted meat, smoked fish or stockfish, and seasoning cubes or powder. Allow it to cook for another 5-10 minutes.

  4. Gradually add the Afang leaves and waterleaf (or substitute greens). Stir well and allow them to wilt and combine with the other ingredients. This should take about 5-7 minutes.

  5. Taste and adjust the seasoning with salt and additional pepper if needed.

  6. Simmer for another 5 minutes to allow the flavors to meld.

  7. Your Afang soup is ready to be served with your choice of fufu, eba, pounded yam, or rice.
