Greetings to everyone in this vaunted community. I want to say that I'm implicitly excited in this contest because this is one of my favorites local dishes. Egusi/Melon Soup is one of my favorite soup this because it is easy to prepare and also best served hot with boiled cassava flakes. Journey with me as I show you how to prepare this exciting local, traditional meal.
Ingredients used
- Blended onions or Sliced (about 3- 5 and fresh chilies, to taste)
- 4 cups of egusi i.e ground melon seeds, ground.
- 1 cup of palm oil
- 2 teaspoons of Salt to taste)
- Bitter leaf (washed)
- Considerable amount of crayfish to taste)
- stock fish
- Fried chicken
Pumpkin leaves
Waterleaf
- Periwinkle
Procedure
Step 1: Prepare the egusi paste by adding ground Egusi and onion. mixed together.
Step 2: Heat a considerable amount of palm oil on medium in a large pot for a minute and then add une into the oil.
Add the stock fish slowly to avoid splash of oil and set on low heat to steam.
Step 3: Scoop the Egusi paste and add into the oil slowly.
Step 4: Allow to simmer for 30 minutes
Step 5: Add the chicken and other additional item and spices. Add all the prepared Ingredients. Add pumpkin leaves and water leaf to the soup
Step 6: Stir continuously and put a lid on the pot and allow cook for 10 minutes, till the leaves soften and wilt.
Step 7: Add your bitter leaf as the final ingredients and allow for 13 minutes.Stir well and check seasoning to adjust. Leave for a while before taking it off fire.

I cannot express in words how this food taste. It is of good nutritional value and it helps fight cancer. It also aid digestion. This meal of one of my favorites local dishes and it is wise to garnish such food with stockfish and meat. This is how to prepare traditional Egusi soup without stress.
