In my city there are many special bites which when it comes to food you will see foods like; rice egusi (melon), afang soup and other varieties of foods which are very common in my city.
Egusi Soup is my city's special food that makes people feel alright. Egusi is generally named after melon, in my city if you enter any restaurant, and ask for the food menu, Egusi Soup is the first Soup that you will see. It is a very nutritious food that is rich in protein which I cherish eating.
Egusi soup is made using ground melon seeds, mixed with a variety of ingredients, and with a small number of sliced vegetable leaves like Ugwu, Ozizi, or Pumpkin leaves. Generally, in Nigeria, egusi soup is a special soup because it can be found in any type of restaurant in Nigeria.
Here I will be showing you how to prepare my city's special bite which is egusi soup. For you to prepare Egusi soup, you will need the following listed ingredients:

- Egusi (Melon seeds)
- Meat
- Pkomo (Cow skin)
- Crayfish
- Dry fish
- Red Oil
- Vegetable leaf
- Pepper
- Seasoning
- Onion
- Salt

I first washed the meat and put it inside a pot, sliced onion into it, and added seasoning.
After some minutes of cooking the meat, I add cowskin, and dry fish and allow to cook.
I add ground pepper, onion and crayfish.
I put the egusi inside a plate mixed it with a small quantity of water and stirred very well. After mixing I then begin to put it inside the pot.
I add a small of salt and seasoning.
I then add red Oil and allow it to cook for 3 to 5 minutes.
I then add sliced vegetable leaves and stir the soup properly.
Egusi is a special food in my city because it is rich in protein and it is prepared using a variety of ingredients such as assorted meat, fish and other ingredients which I would encourage you to give it a try if you haven't eaten it before it is a delicious soup that is good for human consumption.

Hi @josepha that was interesting to find about Egusi soup, actually often we do not pay attention to such simple origin of protein and just throw them away. I believe when preparing soup anything that has nutritional value should be used to make our daily food reach in such products.
Reading the content of the recipe I imagine how that everything would taste, it must be a real favourite food and also look delicious when looking at the photographs of the preparation steps :)
You are right, throwing away such cans of seed that can be used to make delicious soup is unacceptable for those who know the nutritional benefits of the soup. In Nigeria it is well-cherish. Thank you for your time here.

There is no doubt that these are the special baits of your region and prepared in different ways.
