Rusks can be made from bread dough or flour. In fact, when I go to the shops, I look for items in the bakery that are marked down, for instance, muffins, hot cross buns, raisin bread, etc.
I will then take them, cut them in quarters or slice them into thick slices if it is bread, and then dry them out overnight in the oven at a very low temperature. The next morning, they are lovely to eat when dunked in coffee or tea. Best of all, you can keep them for months to come.
I will also bake a cake in a square pan, cut it into blocks when it has cooled down, and then dry it out in the oven. Hence why we say rusks are "baked twice cake."
Horses running on the ocean are those small white waves you see at the back of the ocean, which normally happen when the wind is blowing.
