Our Home-Cooked Vegetable Dish Today Called "Pakbet"

The Ingredients:

There are a few ways to cook the local dish "Pakbet" but my parents just cooks it without the usual fish sauce that would give it the original distinct taste. So mother just omits that ingredient because she is just allergic from having it.

Anyway, my mother would cook these vegetables by just sauteing some garlic, onions, and some tomatoes. Then she would add the squash and then the eggplant, string beans, okra cut-up pieces, and sliced bitter gourd pieces. Then the seasonings are added.

After they are cooked she would then add the "Jute" leaves along with the sweet potato tender leaves. After the leaves got wilted by the heat it is cooked and ready to serve.

This will be our vegetable for today along with some fried mackerel we call "Galunggong" fish. It is quite a nutritious meal and I plan to drink a Lactobaccili drink so that I could absorb most of the nutrients from these vegetables. :D
