Culinary ideas | make teucrah sauce
STEEM ENTREPRENEURS
Hello stemian friends wherever you are
I hope you all are well
this time our lunch menu is mackerel cooked aceh, I really like mackerel even though it is processed in any way it tastes very delicious to me, apart from all that this time I want to process it into a special aceh dish, namely "kuah teucrah" a typical aceh dish is synonymous with suntin acid or belimbing wuluh which has been dried in the sun, every Acehnese dish must always have this sunti acid.
Materials needed to make teucrah sauce:
- 1 segment of turmeric
- shallots
- garlic
- pepper
- sunti acid
- cayenne pepper
- Red chilies
steps in making teucrah sauce:
(1) Clean the mackerel first then add lime juice so it's not fishy and add a little salt
(2) after that, blend all the ground spices, including onions, chilies, sunti acid and others
(3) after that, prepare a little oil for sautéing the ground spices, stir-fry the ground spices and add the curry leaves and pandan stir-fry until it emits a slight fragrance
(4) and after that add the mackerel earlier, and then cook until the fish is cooked, but I don't use water anymore because when I blend the spices I have added water
and tara aceh special teucrah sauce ready to be served for the lunch menu
This menu is one of my and my family's favorite menus so I like and am satisfied with this dish, the most important thing for me about their family is that they are happy, I am also happy
In my opinion, this menu is worthy of being marketed either in the village or in the city because this menu is a habit people really like as a complement to their lunch menu
As I saw at the market, there are a lot of menus in food stalls, in fact most of these menus are the main choice besides the chili menu, including the Yani restaurant in the village as a guide.
This is all I can share as a culinary idea and hope you like it and find it useful
The mackerel cooked Aceh with teucrah sauce looks absolutely delicious! The combination of the fresh ingredients and aromatic spices must create a mouthwatering flavor. It's wonderful that you've shared this traditional Aceh dish and highlighted the importance of sunti acid in Acehnese cuisine.
Thank you sis @yaumilahya and keep up the great work in preserving and promoting the rich culinary heritage of Aceh.
