Black Tea & Uzbakistani Tea

Allo paratha & Desi Ghee paratha

Allo paratha:

Potato paratha is a popular Pakistan especially in peshawar flatbread made with a filling of mashed potatoes and spices. Here is a simple recipe to make potato paratha:

Ingredients

2 cups whole wheat flour
3-4 medium-sized potatoes
1 tsp grated ginger
1-2 green chillies, finely chopped
1/2 tsp cumin powder
1/2 tsp coriander powder
Salt to taste
Oil or ghee for frying

Instructions
  1. Boil the potatoes until they are cooked through. Drain the water and let them cool down.
  2. Once cooled, peel the potatoes and mash them in a bowl.
  3. Add grated ginger, chopped green chillies, cumin powder, coriander powder, and salt to taste. Mix well.
  4. In a separate bowl, add the whole wheat flour and gradually add water to knead into a soft dough. Cover the dough and let it rest for 15-20 minutes.
  5. Divide the dough into equal-sized balls and roll each ball into a small circle.
  6. Place a tablespoon of the potato filling in the center of the circle.
  7. Bring the edges of the circle together and seal the filling inside. Flatten the ball with your hands.
  8. Dust the flattened ball with flour and roll it out gently into a paratha.
  9. Heat a griddle or a pan over medium heat. Add some oil or ghee to the pan.
  10. Place the rolled-out paratha on the pan and cook for a minute on each side until it turns golden brown.
  11. Repeat the process for the rest of the parathas.
  12. Serve hot with your favorite chutney, pickle or curry.

Desi Ghee Paratha:

Desi ghee paratha is a popular Pakistan especially in peshawar flatbread made with whole wheat flour and clarified butter (ghee). Here is a simple recipe to make desi ghee paratha:

Ingredients

2 cups whole wheat flour
2 tbsp desi ghee
Salt to taste
Water as required
Extra desi ghee for frying

Instructions
  1. In a bowl, add whole wheat flour, salt and 2 tablespoons of desi ghee. Mix well.
  2. Gradually add water and knead the dough until it is smooth and pliable. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
  3. Divide the dough into equal-sized balls.
  4. Take one dough ball and roll it out into a small circle using a rolling pin.
  5. Apply a little bit of desi ghee on the circle and fold it in half.
  6. Apply more desi ghee on the half-circle and fold it again to form a triangle.
  7. Dust some flour on the triangle and roll it out into a paratha.
  8. Heat a griddle or a pan over medium heat. Add some desi ghee to the pan.
  9. Place the rolled-out paratha on the pan and cook for a minute on each side until it turns golden brown.
  10. Repeat the process for the rest of the parathas.
    11.Serve hot with your favorite curry or chutney.
