A Rocket/Arugula Salad made With Homegrown (Huge) Rocket/Arugula Leaves

Hi! This is my first post here. This is also an interesting story of how this rocket/arugula came to be! So please read down below if you are interested to hear how they grew! Scroll to the bottom for the recipe of the salad if you want to try it yourself.

I know some people do not like rocket or arugula (I am just going to use rocket from now on). But my family loves it and it grows like weed where I live. I think it is technically a weed. So it explains. Anyways, the image above it some of the rocket that grew which I did not technically plant myself. Note that this is between my normal plants! In the next paragraph read the funny story of how these rocket came in existence!

So how these rocket plants came to grow here was totally by accident. If you know and how the seed pods grow, you will know the problem I am about to describe. One of my plants which I let grow to seed, broke off and the plant blew across the lawn into the next garden where I grow native South African Fynbos ("Fine bush?"). Now my whole garden is full of rocket plants. See the next photo for the extent to of the problem! There are even tomato plants! (How did they get there!?)

Anyways, lucky me I guess, but the interesting thing is the sheer size of these plants! I don't know if any of you have ever seen such big rocket leaves? See the photo below comparing the size with my hands, and I don't have small hands. Average size hands to be honest, but these are massive rocket leaves!!

Back to the salad! If you like rocket, this salad will be a must-make! I love the peppery taste of freshly picked rocket leaves. And it pairs great with apple and onion. See the recipe just below!

So, I never really measure things. I just throw in and hope for the best!

But here is the recipe for this salad:

• 1/4 of an onion
• too much feta
• a carton of cherry tomatoes
• 1/2 of an apple
• a bunch of the rocket leaves
• and any salad dressing

(My salad dressing recipe:

• olive oil
• lemon juice
• 1tsp homegrown gooseberry jam (you can leave this out)
• 1tsp peppadew relish
• pepper
• salt
• pinch of sugar)

And here is the final product! I hope you give this a try. It really is an awesome salad, and I think rocket deserves some credit! You just need to pair it with the right flavours.
