I LOVE sourdough! I usually get it from our local German bakery as it is freshly made with organic flours, just like yours. It tastes delicious, but I also tend to have even better digestion than usual when I regularly consume those doughy bites of heaven. I generally don't have problems with digestion as I take in lots of prebiotic fiber, but there really is just something about the sourdough that keeps everything really running like a well-oiled machine in my gut. :) I've seen a few gut specialists that I follow report similar findings to the ones you shared, so nice to see confirmation from someone who has actually experienced a positive result from including it in their own diet.
