Uttapam Recipe - Healthy and tasty Yum Vegan breakfast

Uttapam recipe is an all time favorite with south indians. Its quick and easy to make and requires almost no cooking skill. Its so versatile that even if you get it completely wrong you can enjoy it as " Chur-Chur Uttapam" 🙃

Its healthy, vegan and super tasty! These days "Idli-Dosa-Uttapam" batter is readily available in the super markets. If you want to make the batter at home its quite easy too. Here is an Idly recipe with instructions on how to make Batter at home.

Ingredients This will make 4 Uttapams.

2.5 Cups of Ready Batter.
1/2 cup grated carrot.
1 medium onion finely chopped.
1 green chilli finely chopped ( Optional)
Cilantro Leaves for garnishing.
1.25 tsp Rock salt / 3/4th tsp normal salt.
Fat of Choice - Ghee/ Oil to Shallow fry.

The Recipe 

Test the batter and judge the viscosity. If you think its too thick you can 1-2 tbsp water. Use your judgement. The batter should NOT be too runny.

Add the salt into the batter and mix.

Heat a flat pan on high flame with a tbsp of oil.

Once hot prepare the pan, this applies to NON STICK cookware as well. Use a slice of Onion on a fork and rub and spread all over the all over the pan.

Then swab with a Tissue paper. This should leave surface looking "Glazed". This will prevent sticking.

Pour 1/2 cup batter on the pan. Spread evenly into a circle. Keep it thick don't make it thin. Use the spatula to spread.

If you don't know how then use a small metal bowl to spread the batter as given in the pic below.

Add the carrots, Onion and Cilantro leaves on top.

Once the Batter has cooked on one side. Flip it. And fry for 15-20 Secs. You can add some oil around the Uttapam to make it crunchy.

Serve hot with Sambar, Coconut ChutneyTomato Chutney or Dip of Choice.
