Aloo Paratha | Potato Stuffed Flat Bread - The healthy and tasty breakfast to start your day

Aloo Paratha recipe is probably one of the most common and popular breakfast recipes of north India. This carbs rich breakfast is perfect for those who enjoy leading a physically active life.This is a great recipe for mothers who have kids. Its quick and easy to make and the stuffing method can be used to send in a lot of veggies into ones child. Its also good nutrition for a child who would be physically active and Aloo paratha serves as a good source of energy.

The traditional version of the dish can be very rich with dollops of ghee/butter/oil used in its preparation. However these days a lot less oil/butter/ghee is used since society is much more health conscious. I have shared the traditional version. You can reduce the amount of oil used especially while roasting.

**TIPS**

If you don't know how to flatten dough watch this Video. If you don't have the equipment Innovate, use a glass bottle with smooth surface.

If you cant get a handle of the technique to flatten dough. Make a round ball and place a flat dinner plate on top and apply pressure at the center to get a round-ish shape. Use dry flour to make sure the flat dough does not stick to the bottom of the plate.

Ideally its best to heat the oven as you flatten the dough so that you can put on the pan as soon as you are done shaping it. However, if you are not familiar with flattening its best to heat the pan later.

*Ingredients**

2 Cups Atta/ Whole wheat flour

2 medium Potatoes boiled

1 medium Onion - finely chopped or grated

1 green chilli - finely chopped

salt to taste

1/4th tsp garam masala

1/4th tsp chat masala

1/4th tsp powdered coriander

1/8th-1/4th tsp Red Chilli Powder

2 tbsp Dhaniya leaves/ Cilantro - Chopped

Ghee ( Clarified Butter) / **Cooking oil if you are VEGAN **

1 cup water

**The Recipe**

- In a flat bowl take the wheat flour, sprinkle 1/2 tsp salt,1 tsp oil/ghee into the flour,1/2 cup water and knead the dough. Use the water carefully, you don't want the dough too soft or too hard. Set Aside.

- Mash the potatoes nicely in a bowl.

- Add the cilantro leaves, onion and the green chilli and mix well.

- Now add the salt, garam masala, powdered coriander, red chilli powder, chat masala and mix well. Set aside

- Make a small round ball of the dough/atta. Flatten it on a pan.(Video below)

- Take a small amount of the potato mixture put it in the center of the flat dough. Cover the mixture with the dough around. Seal it tight.(Pic Below)

- Re-flatten the dough Into a round shape.

- Heat a flat pan on high flame. When its hot reduce the flame to low.

- Put the flat dough on it.

- Flip it after 90 secs.

- Apply Ghee/Oil on top with a brush/spoon. Repeat for the other side as well.

- Roast on the pan till its nice and crisp.

- Repeat the process for the rest of the dough and mixture.

- Its best when served hot of the pan with a thick slice of butter on top, accompanied by curd , Indian pickles or dip of your choice.

Roast on the pan till its nice and crisp. If done right it will swell in places.Repeat the process for the rest of the dough and mixture.

It's best when served hot of the pan with a thick slice of butter on top, accompanied by curd , Indian pickles or dip of your choice.
