A NEW WEEKEND: A New Contest| Describe a Typical Dish in your Country

How are you my steemit friends? Hope you are all doing fine..

I have been anticipating and had been thinking long of what I am going to share in this exciting contest. Well honestly the Philippines has various of food. So I am just so confused on what to share.

So I decided to talk about my favorite dish and I think every Filipinos favorite too. This dish is very known and is always present in every Filipino celebration, sometimes even in an ordinary day we still have it in our dinner table.

My wife s a good cook and enjoys cooking, so I wanna share my personal favorite, Pork Adobo. Adobo or adobar (Spanish: marinade, sauce, or seasoning) is the immersion of raw food in a stock (or sauce) composed variously of paprika, oregano, salt, garlic, and vinegar to preserve and enhance its flavor. The Portuguese variant is known as Carne de vinha d'alhos. The practice, native to Iberia (Spanish cuisine and Portuguese cuisine), was widely adopted in Latin America, as well as Spanish and Portuguese colonies in Africa and Asia.

In the Philippines, the name adobo was given by colonial-era Spaniards on the islands to a different indigenous cooking method that also uses vinegar. Although superficially similar, this developed independently of Spanish influence.

Here is my wife cooking her very mouth watering abodo, here in Cebu we call it Humba it has the same procedure and ingredients with Adobo.

Ingredients

750 g pork, liempo, cut into serving portions or 2 x 2-inch chunks
1/3 cup DEL MONTE Red Cane Vinegar (47cl)
1/4 cup soy sauce
1/4 cup garlic, minced
1/4 tsp peppercorn, crushed
1 pc bay leaf/laurel leaf
1/4 tsp salt
Egg (Optional)

Procedure

  1. Fill the pan with water almost half full. Boil the pork and the egg. And while waiting for the pork and egg to be cooked wash your vegetables. Peel your potato and then slice them together with the onion.

  2. When the pork is soft and the egg is cooked remove and separate it to its broth. Do not throw away the broth coz you will need it later. You may marinate the pork for extra taste, in marinating you may use calamansi, vinegar and soy sauce. Now it's time to sauté, start with the onion.

  3. Use the broth and then put the potatoes. Let it boil for 10 mins enough for the potato to soften. You don't want to overcook the potato so if you want it more or less it's all up to you.

4.Now for flavor I added soy sauce, vinegar, a bit of sugar, oyster sauce and a bit of salt. You'll just have to adjust depending on your taste. Then let it simmer.

5.Lastly,put your boiled egg and let it simmer until it boils and now you are ready to serve your Special Humba with Egg.
