Olivier salad has long been a traditional dish in our country, so its taste is familiar to every person from an early age. So I, having tried Olivier as a child, immediately fell in love with him and continue to love him to this day.

First of all, I love the great combination of ingredients in this dish. There is sausage, eggs, pickles, potatoes, carrots and, of course, sweet green peas. The composition is complemented by aromatic mayonnaise and fresh herbs. However, sometimes my mother prepares a dietary version of this salad, adding chicken breast instead of sausage, and replacing mayonnaise with sour cream. But this Olivier also has a delicious taste.

The presence of Olivier on the table is always associated with a holiday, since it is customary to prepare such a salad in my town for the New Year. Not a single birthday in our family is complete without this dish. Therefore, even when sometimes we eat Olivier just like that, my mood still rises and I feel a slight thrill in my soul, as it usually happens before the upcoming celebration.

There is nothing tastier than homemade Olivier, carefully prepared by mother's hands. She always knows which peas or cucumbers to buy at the store to make the dish perfect. Mom is very responsible in her choice of mayonnaise and sausages, trying to find products with a natural composition and the lowest fat content.

My duties with my father include cutting vegetables for Olivier. And here we also take the initiative, doing everything according to our tastes. So, we usually cut potatoes and carrots into small cubes, and, on the contrary, we put meat or sausage in large slices in a salad bowl.

And there is nothing more beautiful than the moment when mom carefully lays out the most delicate homemade salad on plates, and then we all enjoy its delicious taste together.
