Hi guys,i'm very happy to take part in this wonderful contest which is about my favorite dish. I'm @titi7 from Ghana, and i'm here to share with you a popular local dish in West Africa called Fufu. I'll be showing how fufu is prepared with light soup.
A brief history of fufu
Fufu is a popular food not only in Ghana, but in Nigeria,Sierra Leone, Togo ,Cote d'Ivoire and even South Africa; but are prepared differently.
Fufu was originated from Ghana, and has remained one of the popular dishes in Africa, especially in West Africa. Fufu was invented in the 16th century when Ghanaians were introduced to cassava by the Portuguese during the time of colonization.
Fufu is now a very popular dish which can be prepared using yam, cassava, plantain, cocoyam or the mixtures of the above.
Let's now talk about the heath benefits Fufu
Health benefits of Fufu
Fufu is a very healthy food which benefited us much in Africa. Fufu contains important nutrients and a food energy of 267 kcal (1118 kJ) which keeps an individual strong and healthy . Below are the nutrients found in fufu
carbohydrates(15g), protein(2g+), fat (minimum of 9g) and some vitamins such as vitamin c , vitamin B6 which reduces cardiovascular risk . Also , some minerals like fiber, riboflavin, and niacin can be found in fufu. Adding the soup which also contains hight amount of proteins and vitamin makes fufu a very healthy food to eat . Let's now look at the ingredients needed for the preparation of fufu.
The Ingredients needed for preparation of fufu and ligh soup
Fufu
- Cassava
- plantain
Light soup
- fresh chicken
- fresh tomatoes
- white onions
- garden egg
- garden egg
- 6-7 seeds green u ripe scotch bonnet pepper
- seeds yellow scotch bonnet pepper
- tomato paste
- deseeded uda spice
- clove garlic(optional)
- Big cut of ginger
- cubes Seasoning
How to prepare the Fufu
- Cut the casava and plantain into pieces after pealing off their covers.
- Boil the pieces using clean water till it's well cooked.
- Pound the pieces of the cooked casava and plantain together. Using a mortar and pestle. Any means can be use in pounding but in Ghana we use mortar and pestle for pounding of the cassava and plantain.
- The mixture (cassava and plantain) should be pound very well
- During pounding, the mixture ( cassava and plantain) stick together which you will then mould into a circular or oval shape. Bellow is a picture of a well moulded fufu.
Apart from the mortar and pestle, there a machine in Ghana use for the Pound process. Below is a picture.

Now we have our special fufu done and which need to be covered very well with robber or covered well to prevent too much air and other impure substances from reaching it.
How to prepare light soup
First wash and bled your ginger and garlic.
Wash and cut your chicken; and place the cleaned pieced chicken in a pot
Add your blended ginger and garlic together with your seasoning, salt and the diced onions.
Now , allow the chicken together with the other ingredients to cook for some minutes while staring.
Then add in water to continue the cooking.
wash very well and add a whole garden egg, whole white onions ,whole tomatoes, yellow scotch bonnet pepper and cover to continue cooking.
After some few minutes (5 to 8) , remove all the added ingredient mentioned above
Into a bowl. Add a little water and then blend till it's smoothens .Now add one or one and half tomato paste to the chicken and stock boiling.
Stair for some minutes and the add the following, uda spice, green unripe pepper.
Add some water and cover to continue the cooking for like 3 to 5 minutes.
Pick up the bowl of the blender ingredients, put it into a siever sieve out rough or unblended parts add some water to the sieved mixture and add to the cooking pot.
Add water to reduce the thickness to your satisfaction.
Allow to cook for like 5 to 8 more minutes and your light soup is ready.
Pour the soup over the fufu in a bowl and you are ready to go. Below is a picture of a well prepared fufu with light soup.
