Weekly food Challenge|| how to cook edikang Ikong (vegetable soup)
Welcome to my blog. Today I will be sharing how to cook our traditional soup "edikang Ikong" (vegetable soup).

A pot of vegetable soup
To prepare vegetable soup, you need the following ingredients.
- Fish
- Meat
- Water leaf
- Pumpkin leaf
- Perewinkle
- Oil
- Onion
- Pepper
- Palm oil
- Grey fish
- Seasoning cube
- Stock fish

Meat
The first thing I did after returning from the market was to cut the meat into smaller pieces and after that I seasoned the meat and steamed it separately.
Chopped pumpkin leaf
The next thing I did was washing and chopping the pumpkin leaf as you can see in the picture above.

When I was through with the pumpkin leaf, I moved over to washing and chopping of water leaf as you can see in the above picture.
Cat fish
Having finish with the leaves, I wash and selected out bones from the cat fish I will be using for the soup. See the picture of the cat fish above.
Meat, perewinkle, stock fish and cat fish put together
When I was through selecting bones from the fish and washing it, I took stock fish, cut it into smaller pieces and wash it.
When I was done washing it, I put it in the pot together with already steamed meat and fish.
In the picture above I had added meat, fish, stock fish and perewinkle together.
At this point, I added a small quantity of oil, a cube of seasoning and salt to it. Put it on fire to steam for five minutes.
Grey fish
While the condiments was on fire, I pound grey fish and fresh pepper together. See the picture below.

When I was done pounding the grey fish and pepper, I open the pot of soup that was on fire and added chopped water leaf to it and added onion, using big spoon, I turned it to mixed everything together then cover the pot again and waited for three minutes and after three minutes, I opened the pot of soup, add grey fish and pepper to it.
After waiting for the next three to five minutes, I added chopped pumpkin leaf, 2 seasoning cube and oil, mixed everything together and waited for three minutes.
After waiting for three minutes, I put off the fire and bring down my pot of vegetable soup.
The soup was eaten with fufu. But you can choose your swallow such as semolina, wheat and so on.
