Good day my fellow travellers in steem-travellers community. To my fellow contestants, moderators and admins of this great community I greet you all.
I am happy to take part in this food contest. Today I want to share the food I like eating while traveling to my village in Akwa Ibom State of Nigeria.
Water yam pottage (Ekpang Nkukwo)
Water yam pottage is one of the most delicious food in akwa ibom state of Nigeria. it is usually prepared for visitors who have not been seen for a long time. 99% of people in my state love the food so much. but the challenges is that the food is time-consuming in preparation that is why most people do not have the opportunity of eating it so often. And if they visit you, you prepare it for them they will appreciate you so much for giving them such a delicious and nutritious meal. That is the more reason why whenever I am traveling to my village in Akwa Ibom State of Nigeria I will ask my mum to prepare water yam pottage for me because I hardly prepare it at where I live.
Even when I hardly prepared this delicious meal at where I live but when I saw this contest I decided that I will make out time to prepare this meal and share the recipe with my friends in this community.
Ingredients
Water yam
Cocoyam leaf
Fish
Salt
Onga cube
Red oil
Perewinkle
Grey fish
Pepper
Scent leaf
Pumpkin leaf
Preparation
Step 1
Water yam
Peeled wateryam
During grating
After grating
Peel the wateryam and wash it cut it into the size that can fit comfortably into your palm.
Using greater, great the water young to form thick paste.
Step 2
Cocoyam leaf
Removed from stalk
Remove the fleshly parts of the cocoyam leaf from the stalk. Wash it with water cut it into smaller pieces so as to use in wrapping the water yam paste. Do not use cocoyam leaves that is up to 3 days old to avoid itching in the mouth while eating the food.
Step 3
Pour red oil in the pot you want to use in cooking the food.
Usng the cocoyam leaf, wrap the water yam paste into smaller size.
Step 4
After wrapping it, put in on fire, out water and cover it. Wait for it to steam, then add salt and all the ingredients.
Still let it cook for a while. Add scent and pumpkin leaf to it.
Wait for few minutes, now you can add onga cube to it and a little amount of red palm oil. Turn it to mixed properly.
At this point your delicious Water yam pottage is ready to be eaten.

Thank you for reading my post. The food is suitable while traveling. When traveling, you can put the food in a food flask. It can last up to 6 hours in a food flask without spoiling. And when you reach your destination, if you still want to preserve it for the next day, then you refrigerate it.
