This past weekend, on Sunday to be precise, I attended the Veneto ham festival celebrated every year in the village of Montagnana in the province of Padua.
Montagnana is a beautiful walled city, is one of the most important cultural sites in the Veneto region, and is naturally part of the Borghi d'Italia association.
In fact, I shared a map to show you where this village is located, which is very nice to visit, and I will probably do a full video this summer to show you the beauty of this place.
In fact, that day I was not able to, let's say, visit the village but concentrated on tasting the typical cured meat that is produced in this area and which I think is famous all over the world: prosciutto crudo (cured ham).
Every now and then, when I meet some foreign tourist and I tell him about typical Italian cured meats, especially prosciutto crudo, he only thinks of the Parma area, hence the Emilia Romagna region. However, even in Veneto there are about 10 prosciuttifici that produce this cured meat and export it all over the world.
So I was able to have a very good tasting and then I also included a visit to a nearby ham factory, and for me it was the first time I had been inside this place and I even managed to take some slightly abusive photos because of course it is forbidden to take photos inside.
As you can see, this is the first stage where the pork legs are salted and remain salted for some time before being washed and dried.
When they are hung, they remain there for more than 12 months, in fact this is the time you have to wait before you can taste the raw ham.
Of course, in order to visit these places, one must dress for hygiene with caps and even gowns.
I was left speechless by this experience, which was very nice, because it made me realise how much passion and craftsmanship there is in the product that eventually arrives on our tables, It is a long process but in the end it brings you a very high quality product.
