INTRODUCTION
This delicacy Fried African Black Beans is one of the foods used to identify people from my hometown, Ohafia, in Abia state of Nigeria. We are the
only people that fry this local beans in the Eastern region of my country.

It is harvested from November to early January and eaten from that time April or early May. It is eaten with Palm kernel nut or coco nut. This food is eaten mostly as snacks and you will be filled up as you will drink a lot of water.

The aroma is unique, irresistible or inviting. You can perceive the aroma from a considerable distance.

Visitors during this period will always want to go home with it as a special food from the town. Let me tell you how to prepare it.

Ingredients

  • African Black Beans (desired and available quantity)
  • Water ( for soaking or sprinkling)
  • Salt (very optional)

Step One
Soak in water for about 3 minutes. This will cause it to be very soft after frying.

Step Two
Remove from water.

Step Three
Place your traditional clay or iron pot on fire and sprinkle water on the pot. This will also lead to the easy fry and the softeness and quick pop of the beans. Then allow the sprinkled water to dry.

Step Four
Pour some quantity of the beans. Like the one I fried is two cups and I shared it into three parts and fried each part differently. This help to avoid it getting burnt.

Note that this beans requires low heat for easy cook or fry. Allow to start popping.

Step Five
As it starts popping, use morter handle to gently roll to and fro on the beans. This rolling help to peel the back or coat from the beans. Watch carefully to see that 95 to 98% of the coat is peeled off from the beans while on fire. Then reduce the fire and allow the colour of the beans to turn
light borwnish.

At this stage, extra care is needed to avoid it burning. In fact, at this stage the inviting aroma is spread in your neighborhood.

Our fried African black beans is ready. You can bottle it or serve immediately.

CONCLUSION
This special food is ever sought for during its season. The health benefits cannot be over emphasized. If you traveled to the village at this time, it must be among your gifts from the village.

Why not join me as I took mine with coco nut. Very much delicious.

This is fantastically a delicious Ohafia traditional food. It's more nutritious and of course expensive than the regular beans sold everywhere in the market. Thanks for bringing this to steem-travelers.
