Chicory

I was sitting in my photo archive and thinking - which plant should I show? Will it be a tree, shrub or grass?
I decided to choose grass. It will be Chicory, Common Chicory.
In the places where my childhood and adolescence passed, such a plant does not grow. Where I was born is too cold for him.
Now I see this plant in many places in summer. This grass grows like a weed along the road, near garbage dumps and he even made his way to my plot, to my garden.
So what kind of herb is "chicory"?
The first time I heard this word was in the early 90s of the last century. A female colleague at work treated us to a chicory drink. It was used as a substitute for coffee. At that time we didn't have the Internet yet and I took my word for it that it was a healthy drink and it was rich in various vitamins and trace elements.
A few years later, I saw this magic powder in a store. I remember that even then I bought a package and my wife and I sometimes drank a chicory drink.
Then I thought that chicory was mined somewhere far away, even in another country. I couldn't even think that chicory could grow right next to me. More precisely, I didn't know that this blue flower is chicory!
I read about the process of preparing the powder for its further use in a drink. The root of the plant is used for this. It is fried and crushed. Or vice versa? I don't remember. A description of the process can be found on the Internet.
But personally, I don't do it myself.
Chicory interests me only as a beautiful flower that is attractive to butterflies, bees and other flying insects.
I would also like to add that chicory loves the Sun very much. It grows in light areas, I have never seen it in shady places. And there is another feature - the flower is always directed towards the south, plus or minus Southeast - Southwest.
Relative to the horizon, it is located about 45-50 degrees to optimally use the energy of the Sun.
Now in Russian stores you can find bags of chicory with various flavorings.
I sometimes buy chicory, but without any flavoring additives. I love pure taste.

Beautiful and practical - that's what I like. I'm very much into permaculture on a small scale, so I had the opportunity to work with chicory while volunteering in some perma-gardens. I do adore that plant.

What did you do with chicory? Is it really growing at your place too?
In my current place (Argentina, Rosario), I didn't see that plant yet. I have been working above the others with the chicory while being on Workaway in Spain, in Gosól. I can imagine it could grow here, as the climate is quite similar. Not sure though.
