ingredients:
Dark chocolate, butter, sugar, eggs, flour, baking powder, Apricot jam.

A while back in Austria, a chef named Franz Sacher made a yummy chocolate cake. It had apricot jam inside and was covered in chocolate icing. People liked it a lot, and it's now famous as the "Sacher Torte" dessert.

In our family, we all have a deep affection for the Sacher Torte. Whenever there's a reason to celebrate, we treat ourselves to a slice, but we do so sensibly, savoring its delightful taste without going overboard.

Mix the softened cow's butter with powdered sugar and vanilla and beat with a mixer to a creamy mixture. We add the separated yolks 1 by 1 in the beating process;

Beat the egg whites with a pinch of salt until stiff with a mixer and add the sugar in b portions, mixing until stiff snow;

Melt the chocolate (74% cocoa) in a water bath and add it to the butter-yolk mixture;

Add the butter-chocolate mixture to the egg whites, add the flour and baking powder mixed into it, and carefully mix with a wire whisk or silicone spatula until uniform;

We pour the dough into a 26 cm form, on the bottom of which is placed baking paper, and the sides are smeared with cow butter;

Bake the cake first at 180 degrees for 15 minutes, then at 170 degrees for 15 minutes, then at 160 degrees for 15 minutes, then remove and cool;

The base of the marshmallows of the form is cut in two in the middle, spread the first half of the marshmallow with half of the jam, place the second half on the cake and spread the whole cake with the remaining jam. Leave the base for 30 minutes to harden. The jam should be slightly warmed and rubbed through a strainer;

Soft chocolate glaze - prepare a syrup from 125 ml of water and 200 g of sugar, boiling them until the sugar dissolves. Add the chocolate (58%) to the syrup. Stir until the chocolate melts. While the chocolate frosting is warm, pour over the cake, smooth and remove excess frosting.

Place the cake on a stand with a lace doily!

P.S. Optionally, you can use the chocolate couverture melted with the oil to write the word Saher on the cake.
