Nice machine,... Heat is actually amazingly negative for coffee (that's why it tastes like crap if you leave drip coffee on a hot plate for hours to keep it warm). So despite heat being necessary for the roasting, if you can indeed cool it down as fast as possible after the roasting is complete, it will be beneficial for the quality of the final product
