To begin with, a bullet is just a metal, but it contains poisonous and hazardous metals such as lead, which is extremely dangerous to your system. When you are shot, this volatile and dangerous material mixes with your blood, making the blood poisonous and causing instant death.
Second, human blood is oxygenated, which is why when someone is shot with a gun, the bullet that enters their body contains toxins, toxic and hazardous substances like lead, which lowers the oxygen level in the blood. It would be difficult for that individual to survive if their blood is deoxygenated, meaning it lacks oxygen.
Finally, it is the bullet's toxic, volatile chemical content that destroys, not the bullet itself.
