Bukayo is a Filipino snack made out from shredded coconut meat and sugar. Coconut and sugar are two of the major products of the Philippines. So, there is no wonder why there are delicacies made of these two ingredients.

Bukayo has a long shelf life. This is one the food of the pre-hispanic Filipinos when they travel. Coconut meat is being shredded. Then in a pan brown sugar is left until almost melt then the shredded coconut meat is poured into it. It is taken off the heat. Mixed thoroughly and molded to any shape you want.

Bukayo is the candy of Filipinos before commercial candies covered the market. I really love Bukayo most especially if the coconut meat is still juicy.
