How to prepare kenkey (ground cornmeal)

Ingredients
8 cups of cornmeal, banana leaves or you can replace with aluminium foil, 1 table spoon of vinegar, 1 cup of water
Steps
Use a large bowl or pot add water in it then put the ground cornmeal stir perfectly to get a perfect mix .
Step 2
Use a clean cloth and cover the pot and place it somewhere warm for about six hours. It is most advisable to start the previous day.
Step 3
Put in the vinegar to the cornmeal and mix very well
Step 4
With clean hand, knead the thoroughly let it be stiffened a little, divide the dough into two equal parts
Step 5
With the use a large pot, boil water in it. Then add a half of the divided dough slowly and cook it for 10 minutes, and stir continuously and vigorously. Then remove from the heat.
Step 6
Mix the blend from the pot and the uncooked dough and mix well
Step 7.
Now divide the whole mixture into serving sizes and wrap them using the leaves or the aluminium foil, then place the wrapped pieces on a wire rack on top of water in an already set large pot
Step 8
Let the water boil and then steam for about 2-3 hours then your Kenney is fully ready to be eaten as you would be salivating already.
