Coconut rice
Coconut rice is a dish prepared by soaking white rice in coconut milk or cooking it with coconut flake
Simple stir-fry coconut rice.
Neither curry powder nor turmeric was used.
Recipe:
1.parboil rice,wash and set aside
2.from fresh coconuts, get your coconut milk by blending the coconut meat with water n then sieve. Set this aside.
3.chop your onions and set aside.
4.wash n cut veggies to your choice sizes.(veggies includes carrot, green n red bell peppers, runner beans, spring onions)
5.crush some ginger and garlic
6.crush some yellow red fresh peppers(scotch bonnet )
7.dress your shrimps(one can substitute shrimps for skinless and boneless soft chicken)
8.knorr chicken cubes, bay leaves, thyme and salt.
9.cooking oil
10.sweet corn
The cooking IN full :
1.cook parboiled rice with coconut milk, onions, thyme, ginger, garlic,bay leaves fresh peppers, salt and Knorr chicken cubes till completely done.
2.In your pan heat a little cooking oil and sautee the shrimps.
3.in the same pan, add chopped onions, ginger n garlic n stir n sprinkle some salt then add other veggies starting with carrot, runner beans, sweet corn, green and red bell peppers .Stir fry veggie briefly and add your coconut rice n stir-fry for few more minutes to combine then lastly sprinkle some chopped spring onions and combine for the last time and your delicious stir-fry coconut rice is ready. Serve with fish or any meat of your choice.NB:if you season your coconut rice very well, you won't have to worry re-seasoning during stirfrying.
