Healthy Breakfast Challenge: Super Spheres
Super Spheres
These snacks are super delicious, super nutritious, super easy to make, super awesome for on the go #healthybreakfast!
Breakfast can be a challenge, most house holds are pretty busy with everyone getting ready for the day and running about. These quick bites are easy to grab on the go for your commute or to enjoy with your coffee, tea or hot lemon water.
Ingredients Are Super
°Dried dates
°Oats
°Dried fruit of your choice (today I used a super food blend)
°Nuts (today I used almonds)
°Chia seeds
°Coconut shreds
°Cinnamon
Note I didn't specify amounts, that is because its up to you. Add more or less of what ever your diet calls for or things you enjoy.
If you are someone who stresses you out to not have a ration here is approx measurements for your sanity!
15 medium sized dates
1/2 cup raw Oats
1/4 cup dried fried
1/4 cup nuts
2tbls Chia seeds
2 tbls coconut shreds
1/2 tsp cinnamon
As long as you have the dates as a base you can truly mix in whatever you have or enjoy. I have also used peanut butter, cocoa nibs, bananas and much more. So be creative and have fun.
Procedure Is Super Simple
You can blend with whatever decide you would normally use. I like to use my food processor for one easy step.
° Begin by soaking your dates for 15-20 min in hot water (pit them if they are not already pitted)
°Once they have softened drain about 3/4 of the water. Save a little to help bind ingredients.
°Then place all of your ingredients into your food processor & blend! ( I told you it was super easy)
°For smaller pieces of nuts or dried fruit blend your dry ingredients prior to adding your soaked dates (I only do this if babies are eating them)
°Once they reach a consistency you like roll them up in the palms of your hands and place on a try or plate. You can sphere them and then roll then in raw Oats, Chia seeds or coconut or nothing as all just as pictured!
If you can always balance the consistency with water or oats... If it's too dry add some water, if it's too wet add some oats!
I like to store them in the fridge, but they are raw and vegan so there is no need for refrigeration. You can toss them in your purse or lunch box for on the go snacking.
These are so good, no one will believe they are so healthy! These will also hold up for quite some time, so you can make one batch and enjoy a healthy breakfast all week!

A lot tastier than my morning smoothie
These do look almost as tasty as my usual morning coffee (or six), the coconut particularly is inspired although I am the only lover of coconut in our household.
