Perfectly cooked Mahi Mahi with Mango Salsa over steamed rice
One of my favorite fish, Mahi mahi is a great tasting white fish. However, if you overcook this fish is can be rubbery and tough. Here is my recipe for mahi mahi with mango salsa.
First make your mango salsa
INGREDIENTS:
- 1 Ripe Mango
- 1 Medium Avocado
- 1/2 white or red onion
- 1/2 tomato
- fresh cilantro to taste (I didn't have fresh cilantro on hand so I had to settle for dried cilantro. 😞)
- 1 lemon (I usually use lime but I was out)
- Salt and pepper to taste
Cut up mango, avocado, tomato and onion and put in a good size bowl
Mix all the ingredients together and squeeze lemon (preferably lime) juice into mixture.
Add cilantro, salt and pepper to taste and set salsa aside to marinate while you cook your mahi mahi
For the Mahi Mahi
INGREDIENTS:
- Two 4-5 oz. Mahi mahi filets
- 6 cloves of garlic (optional)
- 1 Tbs butter
- 2 tbs olive oil
- 1/2 lemon
*Salt and pepper to taste
Heat up olive oil and butter in pan on medium heat
Pat filets dry with paper towel to get rid of excess moisture. Season with salt and pepper
Place filets on hot pan. Cook filet on one side for 3-4 minutes (depending on thickness of fish). Flip over and cook other side 2-3 minutes. Take off heat and put on plate for 1-2 minutes before plating. Finish off with a squeeze of lemon juice.
OPTIONAL in the same pan where the fish is cooked, fry garlic until tender.
Prepare plate by placing your fish over white rice. Top fish with the cooked garlic butter.
Top with mango salsa and enjoy! The flavor of the garlic combined with the sweetness from the mango avocado salsa is a flavor delight!
