How About Some Healthy Shrimp & Grits? Yes, Please!

SHRIMP AND GRITS (THE HEALTHY VERSION)

10 oz frozen, deveined raw shrimp
1 tsp olive oil
1/2 tsp minced garlic (or more depending on taste and I LOVE garlic)
1/2 teaspoon cajun seasoning
1/4 cup chicken stock
1 cup riced cauliflower
½ tbsp Smart Balance margarine
1/2 tbsp regular cream cheese
1 tbsp parmesan cheese

(Makes one serving)

First, let's make the Cauliflower Grits:
Roughly chop cauliflower and put in a food processor. Process until it is a fine, rice-like texture. Measure out 1 cup cauliflower and put in a microwave safe bowl. Add the cream cheese, margarine, and parmesan and mix together. Microwave about 1 minute and set aside. You may also prepare the cauliflower grits on the stovetop in a saucepan. Use nonstick cooking spray and a 1/4 cup of water to soften and cook the cauliflower.

Hint: Make it easier and follow my favorite shortcut by buying pre-riced cauliflower in your grocer's freezer :)

Now, prepare the Shrimp:
Heat the olive oil on medium high heat; add minced garlic until heated, add shrimp, Cajun seasoning and chicken stock and simmer until shrimp is opaque and pink. Top on the cauliflower grits, salt and pepper to taste and you have a quick, easy, tasty and healthy dish. Enjoy!
