To start making these spinach muffins that have really surprised me with their ease and pleasant taste, we should wash the fresh spinach leaves very well without removing their stem.
In a pan drizzled with olive oil place the onion previously peeled and chopped, and the spinach already washed cut into strips. Add a little salt (we can avoid it) and let both vegetables lose firmness.
Remove from the fire the already tender vegetables and drain the preparation in a canvas or sieve, helping us with a spoon to squeeze the mixture.
Once we have made the spinach and onion as dry as possible, we place them in a bowl next to the eggs, the oat bran, the oats and the whole wheat flour previously mixed with the chemical impeller. Season with black pepper and nutmeg or other spices if you wish and mix all ingredients well.
In molds for muffins sprayed or brushed with oil, place the previous mixture by spoonfuls and bring to the oven moderated (180 °) for 25 minutes, incorporating a few minutes before removing from the oven a cube of cheese over each muffin if desired.
Tasting
These tasty spinach muffins are a plate full of protein and fiber so they satisfy easily. I prepared them for lunch and accompanied them with boiled quinoa, without further ado, but if we wish, they can compose a complete dinner accompanied by a fresh salad.
