The salad of red peppers roasted with cod is a very versatile dish because it can be taken with a meat or a fish, or in itself as a dish.

I have prepared the salad with small details that differentiate it, since it has different textures that make it more suggestive: al dente; chopped celery; chive; crunchy onion.

I make two presentations so that you can see that the same dish can be used for a family meal and also for a more festive meal.

Ingredients to make roasted red pepper salad with cod (4 people)
3 Big and fleshy red peppers.
250 grams of desalted cod crumbs
4 Onions
2 ripe tomatoes
1 Cooked egg
1 Branch of tender celery
Crunchy onion (sold already made in supermarkets and supermarkets)
Cumin, salt
Oil and vinegar.

Steps to prepare roasted red pepper salad with cod

1.- Put the peppers, 2 whole onions and the tomatoes with a little salt and olive oil in the oven tray. Roast for 1 hour at 180 degrees.

2.- Let cool. Peel the peppers and tomatoes. Onions remove the outer layers that will have been dried in the oven. Take only the inside part that will be very tender.

3.- Cut the peppers with your hand in strips, better than with a knife. Cut the onion finely. Cut the tomatoes until it looks like a pulp. Dress with cumin, oil and vinegar. Rectify salt.

4.- Cut two onions in julienne and brown them in two tablespoons of olive oil. With about three minutes of skillet will be worth it, since it has to be al dente to have a texture different from the softness of the peppers.

5.- Season the cod crumbs with a little salt and pepper and brown them over medium-high heat in a little olive oil. In 2-3 minutes we will have it, it should be juicy and a little golden.

Presentation on plate

Put the salad of peppers dressed, trying to drain, at the base of the plate.
Place the cooked egg on tacos or sheets.
Then the onion al dente.
Half branch of celery cut into tiny cubes.
Next the crumbled cod. Sauce the cod with the broth of the pepper salad.
Finally, put crunchy onion and finely chopped chives.

Presentation with ring

It is important that every time we put a layer of product press with a fork or spoon to get it to hold once we remove the ring.

  • Put a base of peppers salad. Make sure it is drained.
  • A layer of egg cooked in sheets. Pour a little of the pepper sauce over the boiled egg so that it soaks the yolk.
  • A layer of onion al dente.
  • Another thin layer of the peppers salad.
  • A thin layer of celery chopped in small cubes.
  • Finally the cod. Sauté with a little of the peppers sauce.
  • Garnish with the crispy onion and onion.

Carefully remove the ring so that the plate is not dismantled.
