Before showing the recipe step by step, I think it is important that they know this cereal "amaranth" and its properties to know the amount of calories consumed and its benefits.

What is the amaranth?

This plant helps prevent diabetes and other chronic diseases. It contains a seed with which cereals, flours, sweets and other healthy products are made. This product along with corn, beans and chia, was one of the main foods of American cultures and the main source of protein.

Amaranth is a very important food and is consumed mainly as a burnt cereal, from which they are made: alegrías, a typical Mexican sweet, cereals, granolas, tamales, atoles, pinole, marzipan and other delicious products made with their flour such as tortillas, cookies , pancakes, horchata and chocolate drinks. It also produces oils and dyes that are used in cosmetology or chemical or pharmaceutical industry.

Among its great nutritional properties are.

Ingredients


3 cups of amaranth
1/4 cup of warm water
5 grams of dry yeast
2 tablespoons of olive oil
1 teaspoon salt
1/4 cup of water
1/4 cup of amaranth
enough flour to extend
1 cup of tomato sauce
1 cup of mozzarella cheese
1 cup of cherry tomatoes cut in half
1/4 cup of red onion
1 cup of apple cut into slices
1/2 cup of crumbled goat cheese
4 pieces of basil leaf

Preparation


1-Preheat the oven to 200 ° C.
2-Blend the amaranth until a fine powder is obtained.
3-Hydrate the yeast with water and let stand 10 minutes.
4-In a blender add the ground amaranth, olive oil, salt, previously hydrated yeast, water and beat for 10 minutes until a smooth and firm dough. Add the amaranth and beat for 5 more minutes.
5-Place the dough on a previously greased bowl and leave to ferment for 1 hour or until it doubles its volume.
6-On a floured surface, spread the dough to a thickness of 2 mm, place on a round tray.
7-Add tomato sauce and sprinkle over the whole dough, top with mozzarella cheese, place cherry tomato, purple onion, apple and goat cheese.
8-Bake for 12 minutes or until the crust is cooked and crispy.
9-Garnish with basil leaves and serve.
