I never liked them until I started dating a Polish man! His mother probably wouldn't trust me if I didn't eat beets. ;)
I 've used a spiralizer and beet noodles and liked those.
I found a salad once that had shredded beets, carrots and apples with fresh mint and I think some apple cider vinegar. It was delicious! Maybe something like that would be more your speed. :)
