Quick and healthy lunch prep: The iceberg salad

Since last year, I made it a point to have a healthy lunch, preferably low carb and full of vegetables. I was suffering from stomach issues and also I had put on shit loads of weight. Other than the health factors, eating lunch out everyday can get quite expensive and for a school go-er like me, it is simply out of the budget. Preparing salads takes a small amount of time, it is super healthy, super cheap and with proper ingredients, quite filling. When in a rush you can always reduce the different items you put in there.

This morning I was in quite a bit of rush and that is how I came up with this super delicious and healthy salad.

The Iceberg Salad

Ingredients:

  1. Iceberg salad
  2. Yellow paprika (you can use red as well)
  3. Cucumber
  4. Home-made croutons (all you need to do is cut of the edges of the bread and dry it in air, add some garlic powder for flavor)
  5. Yogurt dressing (just add some salt, teaspoon of oil, garlic powder and dried herb of your choice to some yogurt)
  6. sunflower seeds

Recipe:
Take some iceberg salad leaves, chop them into a size that you would like to ingest, lol. Chop up some cucumber, some yellow paprika (or bell peppers whatever you would like to call it) and add it to the leaves. Then, top it up with some croutons and either sunflower seeds. Sunflower seeds are an excellent source of fiber, amino acids (especially tryptophan) which make up the building blocks of proteins, B Vitamins, phytosterols, and more. They reduce the risk of heart diseases and are also full of antioxidants. At last, enjoy your salad with the home-made yogurt dressing. You can pack it separately in your lunchbox from the salad.

Well, there you have it. Can it get any easier than this? No!!! Go get healthy <3
