Healthy Low Carb Banana Pancakes Recipe!
Oh the things you find when wasting time looking at people better looking than yourself on instagram...
So, while browsing the stream of consciousness that is instagram I saw an image featuring a new healthy low carb recipe.
BANANA PANCAKES!
I'm always on the lookout for new healthy things to put in my mouth so I dutifully tapped that delicious looking picture assuming I would just gaze at the beautifully staged food pic and wouldn't follow through with making anything that involved actual steps.
But surprisingly the recipe seemed so simple that I thought I'd try it out for myself and I'm here to tell you I have tasted Banana Pancakes and they have since become a featured good tasting treat I've made many times.
The only downside is, I didn't want to ruin the healthiness of the pancakes by slathering sugary syrup all over it so I have been eating them plain, but dont worry I'll allow you to drench these delectable pancakes in whatever you want.
Banana pancakes, could they really be good tasting? Find out for yourself, follow the simple recipe below...
NECESSARY:
ONE BANANA
TWO EGGS
OPTIONAL:
BAKING POWDER
VANILLA EXTRACT
COCONUT OIL
STEPS:
Take that happy banana rip its skin off and then smoosh its guts until you can no longer hear its pitiful little screams.
Throw two eggs on top and whisk thoroughly (I simply use the fork. If you want to use an actual whisk, that's cool, sure, its definitely not overkill on your part).
OPTIONAL STEPS:
Sprinkle a little baking powder on top of that strange mixture and a smidgen of vanilla. Don't overthink the amounts, It'll be fine I'm sure. I believe in you.
Mix it all together, remember to think happy thoughts at this step. This is where a lot of people screw up. The happy thoughts are key.
Then, if you're like me and have a pan that hates you and enjoys lying about its non stick properties, cover that pan with some non stick spray stuff to stop its treachery against all that is holy and good and make sure your beautiful pancakes dont turn into ugly broken pieces of nothing...
you know the spray stuff I'm talking about, I'm sure.
Anyways, heat that stove top up, slap some of that mixture on to that pan and cook till ya need to flip. You know what to do.
So hear's the thing, unlike regular pancakes these have a little more of a runny consistency on the pan. It takes a second to get the heat just right and flipping is a little more precarious than usual, but if I can do it so can you! Remember, I believe in you!
Once all done, if you so wish, put a little coconut oil on top to add some healthy fat.
The final product looks just like a normal pancake and tastes quite like French toast. Happy healthy eating!
