Do You Brew Your Own Symbiotic Culture Of Bacteria & Yeast?

My journey into brewing began a few years ago when my mother shared one of her SCOBYs with me.

KOMBUCHA!

In my kitchen apartment, atop my pantry, I proudly displayed my fungus in a jar for all to see. Naturally, it was a great conversation starter! 

What Is Kombucha?

It is an age-old fermented tea beverage that has been consumed for centuries in many different cultures. The ingredients are very simple - tea, sugar, a SCOBY and patience. Yes, anyone who brews understands that patience is key to the success of whatever you are brewing! 

What Is A SCOBY?

When you hear SCOBY, think a Symbiotic Colony Of Bacteria and Yeast. The sugar + tea is fermented  by the bacteria and yeast found in the SCOBY. The fermentation process can take anywhere from 7-14 days depending on the strength of the SCOBY and temperature of the environment. During fermentation, the SCOBY consumes over 90% of the sugar, which results in a far less sugary product than when you started. You know things are happening in your brew when you can see "The Mother" creating a "baby" or secondary culture on top of itself. Yes! Your SCOBY will grow babies that you can use to brew new batches or you can share with your friends! How exciting is that?!

Kombucha is a fantastic probiotic source packed full of good bacteria, vitamins, minerals and enzymes essential to maintaining a healthy digestive system. Optimal gut health relies on a balance between all the good and bad bacteria in our guts. The health benefits of drinking kombucha include:
