The carrot is a vegetable of regular consumption worldwide. It can be consumed in various ways, even raw, and both its texture and taste, are very pleasant on the palate.

Since the rumor spread that carrots contributed to having an excellent view, during World War II, it has been insisted on the fact that these vegetables have an effect on visual health. For this reason, several scientific investigations have been made about its properties and benefits.

Next, I will tell you more about the benefits of this food and why we should include it in our diet more regularly to make the most of it.

  • Eye health

All the nutrients of the carrot act in the organism in various ways, for example, beta carotene acts as an antioxidant compound that is transformed into vitamin A. This particular vitamin, also known as retinol, helps to promote the proper functioning of the retina human Additionally, this vitamin helps to see better when there is little light.

The lack of vitamin A in the body can lead to an eye disease called 'xerophthalmia', which is characterized by the dryness of the conjunctive membrane and opacity of the cornea. Although it is an extreme case, it comes to give us an idea about the importance of having vitamin A in the body.

  • Skin health

Vitamins A, B and C, together with other nutrients, such as flavonoids, help the skin to heal more easily in case of external injury and to stay healthy.

The alpha and beta carotene contained in the carrot also come to be extremely beneficial nutrients for the health of the skin, since they become an antioxidant that helps:

Combat the action of free radicals (which are molecules that promote the deterioration of cells and, therefore, aging).
Reduce inflammation in case of injury.
Accelerate the healing process of injured skin.
For its part, vitamin E promotes the formation of elastic fibers and collagen connective tissue and, in turn, combats the action of free radicals. Consequently, it acts as an antioxidant that, in short, helps to maintain the elasticity and smoothness of the skin.

  • Health of the digestive system

The carrot is a vegetable with a high water content, therefore, it is a good source of fiber. This gives digestive properties very important for the health of the digestive system.

It has been proven that, when eaten, the carrot increases the production of saliva and, also, of the gastric juices that are involved in the process of digestion. In turn, it helps prevent heartburn, the formation of ulcers and keep the intestinal flora in good condition.

When consumed raw, it is able to increase bowel movements and combat constipation. This is because it contains pectin. However, when consumed cooked, the astringent components of the carrot will be enhanced, which are convenient in case of diarrhea.

The carrot is a very complete food that should be included more often in the diet. Of course, it is not necessary to exaggerate. Do not forget that any excess can be harmful to health. In this sense, moderation is the key to success.
