Love the post and kale.
Did you know animals don't naturally eat kale? Since kale is high in oxalis acids, it increases the load on the kidneys. But steam it lightly and throw away the acids with the water. You'll get awesome kale nutrients without the ox. acid that is tied to gout and oxalic crystals in vagina.
Also, kale is "goitrogenic" -- raw kale in large / frequent amounts interferes with iodine uptake, can cause enlarged thyroid and can slow thyroid leading to low energy. Sadly, so is my go-to green, arugula. Doesn't mean you can't have it, just means too much of a good thing can lead to a bad thing.
