If you are not very fond of cooking, maybe you would like to taste some chickpeas with vegetables. Also, if you have little time, this recipe will meet your requirements, little time of preparation and very nutritious.
300 grams of cooked chickpeas
1 large onion
2 cloves of garlic
1/2 glass of crushed tomato
2 glasses of vegetable broth
A bit of sugar
Salt to taste
Peel and chop the onion, then scrape and chop the carrots, then wash and chop the zucchini in small cubes. Then in a pan with a little oil sauté the onion and carrots, salt and cook for 10 minutes, chop the garlic and add to the sauce with the zucchini.
Then add the chickpeas and the crushed tomato with a pinch of sugar, salt and the two glasses of broth. We cook and when it begins to boil over low heat until all the ingredients release their flavor.
Serve the chickpeas on the plate and finish sprinkling a little chopped parsley and watering it with a drizzle of olive oil.
