Summer squash is a extremely powerful, nutrient packed veggie. Don't know how beneficial adding squash to your diet can be? Today I will be going through the many reasons why summer squash is so important. Followed by a recipe so you can enjoy this tasty healthy treat.

Squash comes in many different varieties, standard green and yellow zucchini can be found all year round in your local grocery store but some types are more difficult to come by. A few are Costata Romanesco Zucchini, Pattypan Squash, yellow squash, Cousa squash, Zephyr Squash, Eight Ball Zucchini. Studies have found that zucchini squash has higher mineral richness then the other varieties and yellow-skinned squash is richer in carotenoids.

Why and how does eating squash promoting good health? Squash contains a daily value of 36% lutein and zeaxanthin both of which are extremely important, as well as 18% beta-cryptoxanthin, 9% beta-carotene, a rich source of magnesium and a great source of chlorophyll. That being said theses are just some of the many kinds of nutrients squash has, just remember the skin is also very important as it contains 2-10 times more Carotenoid richness then that of it's flesh.

Squash can be prepared in many ways, below is just one. And whats the best part? It's just so delicious.


Goat Cheese Summer squash recipe :

What you will need.

2 medium yellow squash, cut lengthwise into 12 1/4-inch planks
4 oz. fresh goat cheese, softened
2 Tbs. olive oil
1/2 tsp. fresh lemon zest
1 Tbs. finely chopped black olives
2 tsp. finely chopped basil or mint plus 12 fresh basil or mint leaves, divided

Preparation

| Heat pan to high. Line baking sheet with parchment paper. Brush squash on both sides with oil, season with salt and
pepper.

| Cook squash for 6-8 minutes, turning once, transfer to place to cool.

| Combine goat cheese, olives, lemon zest, and chopped basil; season with salt and pepper.

| Arrange squash slices on cutting board; spread 2 tsp. goat cheese mixture on each slice, and set 1 basil leaf on top of goat
cheese at narrow end. Roll slices up from narrow end, and arrange on prepared baking sheet.

| To serve: Preheat oven to 375°F. Warm for 4 to 5 minutes.
