Mango and Its Relevance
Mango is the national fruit of the Philippines. In our language, we call it "mangga". We have two mango trees at the backyard, unfortunately these have not been well taken care of properly so it didn't manage to grow fruits anymore. The last time we had a harvest was two years ago. Good thing, mangos really live up to its name "being the national fruit of the country". You can find it anywhere in the market. When it is the season, it's a lot cheaper. Today, I bought these mangoes for 20 pesos each, plus a shrimp paste that cost 5 pesos per tablespoon.
- The one that I bought earlier (please see image above), is what you call "kinalabaw" also known as "carabao mango".
- Then there is what you call "Pico". If you're fond of sour taste, then indulge in this kind of mango while it isn't ripe yet.
- An "apple mango" is also a variety. You can easily distinguish this type because it has a reddish appearance.
- Another is the "indian mango". This is the mango we have at our backyard. I don't have a photo of it handy but I found a good shot from http://thedailyroar.com/culture/philippines-national-fruit/.

So delicious, they are in Season here in Florida and friends always bring us fruits from their trees. I have over 50 lbs at my house still. I use them for cooking, making recipes, and many sauces and glazes and marinades.
