The qualities that are hidden in spicy vegetables
It is difficult to say exactly when people have been using spices in food but it is very easy to say that the history of spices is equal to the history of human beings.
From time immemorial, various spices have been used to enhance the taste of food. These have a special role in adding flavor and color to food and preserving food.
These spices, especially turmeric and pepper, have been extensively researched in recent times.
Scientists say that these spices are beneficial for health. That's why these are no longer limited to the kitchen, they have reached medical science.
The chemical ingredients in spices help in preventing and curing various diseases. By collecting these ingredients from spices, they are now being used as alternative medicines.
Bangladeshi nutritionist Nazma Shaheen is researching the spices used in daily cooking. He is a professor at the Institute of Nutrition and Food Science, Dhaka University.
Nazma Shaheen said many Indian spices have been used in Ayurvedic medicine for many years. But the ingredients in these spices are recently being used as an alternative to spices, and are available over-the-counter in developed countries, he said.
Nazma Shaheen says, many of us think that spicy food is harmful. But the spices that are used in our daily diet are quite beneficial for health.
“Many spices help us digest,” he said. The Japanese eat raw fish. Along with this raw fish they also give a piece of ginger which helps in digestion of raw fish.
Also many spices like turmeric and garlic contain anti-microbial or anti-bacterial ingredients.
Some spices like fenugreek, onion, turmeric and garlic also work to prevent diabetes. These spices help to reduce the amount of glucose in the blood.
But some people complain that eating a lot of spicy food causes them to suffer from various health problems including heartburn and gastritis.
Nazma Shaheen says, any food, if you eat more than you need, will be a loss. No matter how nutritious the food, there is an amount to eat.
We can't eat anything excessive. Milk and eggs are so nutritious food but I can't eat as much as I want. The same is true of spices.
He said that many studies have found various types of ingredients in spices which are beneficial for health. Scientists have confirmed these benefits by conducting chemical analysis in the laboratory, experimental application in the animal body and later in the human body.
There is also a scientific basis behind the eating habits that people have developed over hundreds of years.
We eat fish from lakes, ponds and rivers. These fish contain many germs. That is why in our diet the fish is first washed with salt and disinfected. After that it is smeared with turmeric, cooked for a long time and then eaten. But in coastal countries, those who eat marine fish do not suffer any harm even if they eat raw fish. Because salt water does not contain bacteria.
The spices we use in our daily cooking include red pepper, turmeric, garlic, coriander and ginger.
Pepper
One of the spices used in our food is red chilli powder.
It contains a bioactive compound called capsaicin. It helps reduce the amount of cholesterol in our liver and blood.
Its main function is to destroy fat. Many studies have shown that capsaicin plays a role in human longevity.
Red pepper reduces the amount of fat in our body. Capsaicin also prevents plaque from forming in the blood and blood vessels, said Nazma Shaheen.
It also regulates the liver in such a way that there is less cholesterol synthesis. That is, it interferes with the production of bad cholesterol.
Red pepper is widely used in Korean cuisine.
Yellow
Yellow spice has been the most studied. Nutritionists say that the healing properties of the essential oils, have long been known in ancient times. Turmeric has been used in Ayurvedic medicine for thousands of years.
Nazma Shaheen said that turmeric is called a tonic of the heart. It keeps the blood thin. It also strengthens the heart.
Turmeric also helps reduce bad cholesterol in the blood. Increases good cholesterol. This spice also plays a role in preventing plaque from forming in the blood vessels. This yellow enhances the body's resistance to disease.
The curcumin ingredient in turmeric has an anti-oxidant role. The free radicals that are produced in the body for various reasons can cause various kinds of damage. The role of turmeric in these resistances is also significant.
It protects the liver. It also helps prevent the damage to the lungs caused by nicotine. It also acts as a neuroprotective for which it is now seen that curcumin is also being used in the treatment of Alzheimer's patients, he said.
Turmeric helps to heal wounds. Because it acts as an antibiotic. As a result, if it is cut somewhere, turmeric is planted there.
Turmeric also has a role in the prevention of cancer and diabetes. Yellow curcumin also protects against cataracts. It also has a role in preventing various types of inflammation in the body such as knee pain.
Because of all these qualities, drinks like coffee are now being made with this turmeric.
Garlic
Garlic is extremely beneficial for heart disease. Many people eat raw garlic to prevent heart disease. Garlic is also used in Ayurvedic medicine. Studies have shown that it helps reduce cholesterol or bad fats. Prevents blood clots.
Garlic contains sulfur or organo sulfur. This is why garlic has a strong odor.
It contains amino acids that protect our stomach from bacteria. Usually through salads or raw vegetables, a type of bacteria enters the stomach which can cause ulcers there. Later it can turn into stomach cancer. The amino acids in garlic interfere with the process of cancer, said Professor Nazma Shaheen.
Studies have shown that people who eat more garlic and onions have a lower rate of stomach cancer.
Garlic also has antioxidant ingredients. It also acts as an antibiotic. Cures colds and coughs. In addition to curing inflammation and infection, it also strengthens the immune system and plays a role in combating diabetes.

Ginger strengthens the body's immune system. It also helps reduce cough, nausea and indigestion.
Nutritionist Nazma Shaheen said that ginger is widely used in Chinese medicine. This spice has a role in the prevention and cure of various diseases like body aches, hyper-tension, dementia, constipation and arthritis.
