A Day Of Preparing Ahead

In late summer when the Elderberries come on our plants, we often freeze to can them at a latter time. Here, the last of these berries picked last summer are now in usuable form. I say usuable, as they can not be eaten in their raw form. They can make you really sick, so never use them raw.  Elderberries are used on the homestead during this time of year to help support a healthy immune system. It  is wonderful and effective when taken at the early signs of a cold.  Here they are  sealed and ready to use when needed. Elderberry Syrup is better than a flu shot and helps children and adults to overcome colds, flu, and other illnesses. On the homestead we use Elderberries as preventive medicine. Each day we take 1/2 shot of Elderberry Syrup made with honey daily. It is a great way to stay healthy throughout the winter. 

In the kitchen, it is an amazing and healthy pancake or waffle syrup. It is also good over homemade vanilla ice cream. It can be a great treat over healthy bread pudding, cheese cake, and other deserts. 

My simple receipe follows:

2 cups( fresh from my own Organic bushes) Elderberries

4 cups spring water or water without chlorine)

1 Cinnamon Stick

I hunk fresh, peeled, and sliced ginger from the garden

Bring to a boil and then simmer for 40-60 minutes

Remove from heat and measure the liquid. Then return to the stove, and add half as much local honey as liquid. Bring syrup back to almost boiling. Do not let it boil. Fill jars and turn over to make sure the jars seal.

On this day we also dried a some fig leaves from our trees for tea.

I didn't realize that. Perhaps my mother had told me, but I didn't know. I went looking for more to read about raw berries and I found this. Thank you for making me curious and for the recipe!

Your welcome. We had a friend one time in Florida ask to go forging with us. We assumed that she knew about them and she took her berries home. Her college daughter asked for a smoothie and she thought to make it healthier and put a few in the blender. Her daughter spent several days in the hospital and was quite ill. Since then, I never share anything about elderberries without clarifying that point. Glad it made you curious. That is always fun.

Ohh this reminds of my granny and her elderberry syrup... smelled awful when she was making it... but oh so healing! I once made cough drops out of the syrup too.

With , when you use honey I think it smells awesome. Love the smell. They used to make it with sugar, but honey is better for you.

Do you have to use only the dark purple berries or can some that are less ripe be used?

You should try and only use the dark purple berries. One or two of the less ripe berries won't hurt you, but too many are not good.
