#HappyBirthdayContest - Chocolate Chocolate Chip Brownies
This is my entry for the #HappyBirthdayContest created by @vegan.niinja.
I make variations of this recipe depending on what I have available in the pantry . This is a super chocolate recipe which I thought would be a great side line at a birthday party. Hope you enjoy.
Ingredients
1 and 1/2 cups of cooked great north beans or 1 can drained and rinsed beans.
12 oz packet of pitted medjool dates.
1/2 cup of creamy almond butter.
2 tbs of arrowroot flour
1 tsp of vanilla extract.
1/2 a cup of whole wheat flour.
1/4 a cup of unsweetened cocoa
1/2 a tsp of double acting baking powder
1/4 of a tsp of salt.
1 250 gram bag of vegan choc chips
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Put the dates in a small saucepan and cover with water. Cook gently for about 10 minutes until soft. Don't drain.
- Combine the beans, dates (and water they were cooked in), almond butter, vanilla, and arrowroot powder in a food processor until smooth and creamy.
- In a bowl combine the flour, cocoa, baking powder, and salt.
- Add the puree mixture to the flour mixture and combine.
- Add the choc chips to the mixture and gently mix.
- Spoon the batter into an 8 inch square baking dish lined with baking paper.
- Cook at 350 degrees for about 50 minutes.
- Slice into 9 bars.

Yes. I haven't tried tinned beans. I cook a bag of dried beans from scratch and freeze them in portions.
