#HappyBirthdayContest - Chocolate Chocolate Chip Brownies

This is my entry for the #HappyBirthdayContest created by @vegan.niinja.

I make variations of this recipe depending on what I have available in the pantry . This is a super chocolate recipe which I thought would be a great side line at a birthday party. Hope you enjoy.

Ingredients

1 and 1/2 cups of cooked great north beans or 1 can drained and rinsed beans.
12 oz packet of pitted medjool dates.
1/2 cup of creamy almond butter.
2 tbs of arrowroot flour
1 tsp of vanilla extract.
1/2 a cup of whole wheat flour.
1/4 a cup of unsweetened cocoa
1/2 a tsp of double acting baking powder
1/4 of a tsp of salt.
1 250 gram bag of vegan choc chips

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Put the dates in a small saucepan and cover with water. Cook gently for about 10 minutes until soft. Don't drain.
  3. Combine the beans, dates (and water they were cooked in), almond butter, vanilla, and arrowroot powder in a food processor until smooth and creamy.
  4. In a bowl combine the flour, cocoa, baking powder, and salt.
  5. Add the puree mixture to the flour mixture and combine.
  6. Add the choc chips to the mixture and gently mix.
  7. Spoon the batter into an 8 inch square baking dish lined with baking paper.
  8. Cook at 350 degrees for about 50 minutes.
  9. Slice into 9 bars.

Loos great and it sure is delicious. Yet, Did I read right? You've put beans into the mix? Interesting :)

Yes. I haven't tried tinned beans. I cook a bag of dried beans from scratch and freeze them in portions.
