Good post, I find it amazing that doctors hand out statins like they are candy. I don't think they really know what long term damage they are causing.
Oils a generally only unstable for cooking, so extra virgin and cold pressed olive oil is fine if you're not cooking at high temperatures. Once an oil reaches it's smoke point all the goodness is gone and it starts to form free radicals. I regularly use EV organic olive oil in salads.
