Lion's Mane Mushrooms: The Crab of The Fungi World?

I used to think mushrooms were gross as a kid.

Funny how things change, and now I've got multiple mushroom patches growing at any point in time in my trusty garden shed.

Recently, I came across an interview with Paul Stamets, one of the world's foremost mycologists, and he rekindled my interest in mushrooms. I picked up a kit and started out with three types:

  1. Enokitake mushrooms
  2. Blue oyster mushrooms
  3. Lion's mane mushrooms

Today I'll be sharing my grow-along, some photos, and some thoughts on the Lion's Mane mushroom which is now my #1 favorite mushroom from both a taste and health perspective.

Harvesting Lion's Mane While Sipping Home-Roasted Coffee

The coolest part about the whole process was getting to cook them up at the end of it! Here's what I did:

  1. Slice off of the patch and into 1/2" "mushroom steaks"
  2. Place in a dry pan on heat for 5 minutes to get moisture out
  3. Add liberal amount of grass-fed unsalted butter and saute for 2-3m per side until golden brown and crispy
  4. Season with salt and liberal amount of pepper
  5. Enjoy!

It tastes flaky, rich, and very crab-like - highly recommended.

Wow, that video really needs a NSFHP (Not Safe for Hungry People) warning.

I so want to try Lion's Mane now. I will have to see if I can find a kit for that in the UK.

I'm going to experiment with making and inoculating my own substrates now - I can't survive off the kits alone anymore. Let me know if you get one in your area, curious if there are good UK sources.

Yeah, I was curious for a while until I just bit the bullet and bought a kit. Now experimenting with making my own substrates and inoculating...it seems I have the fungi bug...

What kind of mushrooms would you recommend for a first timer? Really only had white button a portobello before

Oysters are your best bet for a beginner - I am growing some right now. VERY easy to grow and absolutely delicious. I will do an oyster video soon :)
